How we check the rules

Every number on this site traces to a source we name, on a date we print. Here is the discipline behind the datasets.

Primary first

State statutes, state agency pages (health departments, ABC boards, tax authorities) and county environmental-health programs outrank everything. Where a rule is genuinely set at county level — most food-permit fees are — the dataset stores the framework and the issuing office, and the checkers say "set by your county" rather than printing a number we do not hold.

Secondary, labeled

A few things have no official source — quota liquor license prices are set by private negotiation. Where we publish a market range, it is labeled secondary, given as a wide range, and dated. Where no reliable range exists, we print that instead.

Dated, and re-checked

This dataset generation was checked October 23, 2026. Home-food laws change several times a year (five to eight material changes annually, plus California's January cap adjustment and new MEHKO county opt-ins); liquor law overhauls arrive state by state. Pages carry their source lines so you can verify any row against the office itself in one click from your state page.
